I recently noticed that YouTube videos are 720p maximum resolution, regardless of the connected TV (1080p or 4k)
can remedy this problem?

Which 'Hardware SDK' version, 'VidOn XBMC' version and/or Video Media Center (VMC) version do you have installed on your VidOn.me device?
 
Also, the picture quality you see will depend on how well the YouTube video was encoded...

The picture quality depends on the max resolution of the source.
